Couscous Carrot Salad
4 carrots, shredded
2 cups Israeli Couscous
1 apple - peeled, cored and shredded
½ Cup Golden Raisins (can use dried cranberries as well)
½ Cup chopped dates
1 tablespoon lemon juice
2 tablespoons honey
1/4 cup slivered almonds (can use pecans or walnuts as well)
Salt and pepper to taste
**Optional: To add a little creaminess, add 2 Tbsp. of Mayo or Greek Yogurt
Directions:
In a bowl, combine the carrots, apple, lemon juice, honey, nuts, salt and pepper (and mayo/yogurt). Toss and chill before serving.
