Couscous Carrot Salad
This recipe offers great flavor and texture. The sweetness of the carrots, honey and raisins is offset by the citrus tang of the lemon juice while the yummy crunch of the nuts gives the dish a great crunch!
4 carrots, shredded
2 cups Israeli Couscous
1 apple - peeled, cored and shredded
½ Cup Golden Raisins (can use dried cranberries as well)
½ Cup chopped dates
1 tablespoon lemon juice
2 tablespoons honey
1/4 cup slivered almonds (can use pecans or walnuts as well)
Salt and pepper to taste
**Optional: To add a little creaminess, add 2 Tbsp. of Mayo or Greek Yogurt
In a bowl, combine the carrots, apple, lemon juice, honey, nuts, salt and pepper (and mayo/yogurt). Toss and chill before serving.
