Strawberry-Thyme Hand Pies
Crust:
1 ½ cups flour
½ tsp sugar
¼ tsp salt
½ cup chilled unsalted butter, cut into cubes
Filling:
Flour for dusting
2 cups sliced strawberries (about 10oz)
2 Tbsp. fresh thyme leaves
1 tsp. lemon zest
1 Tbsp fresh lemon juice
¼ cup sugar
¼ tsp salt
1 large egg whisked with water for egg wash
1 Tbsp sugar for dusting
Preheat oven to 400 degrees
Combine dry ingredients for flour and mix in butter pieces until “wet sand” texture, set aside to chill
Slice strawberries, grate lemon zest, juice lemon, remove thyme leaves from stem
Combine all wet ingredients together in bowl and mix gently, but thoroughly
Roll out dough into ¼ inch thickness (or pat with hands into small thing rounds) and cut out circles about 3 inches in diameter
Take a small spoon of filling and place in the center of one dough circle, place second circle on top and secure edges by pressing down fork
Brush egg wash over top of hand pies and dust with sugar
Bake 15-25 minutes until golden brown
