Garlic Cauliflower Mashed "Potatoes"
1 medium head cauliflower
1 tablespoon cream cheese, softened
1 tablespoon sour cream
2 Cups and 1 tsp Vegetable or Chicken stock
1/4 cup grated Parmesan
1/2 teaspoon minced garlic
Salt and Pepper to taste
1/2 teaspoon paprika
Chopped chives for garnish
3 tablespoons unsalted butter
Bring stock to a boil over high heat in a steamer pot.
Clean and cut cauliflower into small pieces. Steam above the boiling stock for about 6 minutes, or until well done. Drain well and pat dry with a paper towel.
Transfer cauliflower to a food processor and add sour cream, cream cheese, Parmesan, garlic, additional stock, butter and puree until smooth. Season with salt and pepper for taste.
Sprinkle paprika on top of Cauliflower mash, garnish with chives and serve.
