Enlightening Entrees!

This is a fantastic way of working super nutritious salmon into your diet. Salmon is a prime source of omega-3 fatty acids which are healthy fats associated with improved heart health and brain function.

1 (14.75 ounce) can canned salmon
1 egg
½ diced and sautéed sweet onion
1 tsp Garlic-Herb Powder
1 tsp Italian seasoning
1 tsp Cajun/Blackening Seasoning
1 tsp Salt
½ tsp Ground Pepper to taste
1/2 cup seasoned dry Panko bread crumbs
1 tablespoon olive oil
1-2 tbsp Sweet & Sour or Teriyaki sauce
Regular or slider buns for serving

Saute onions with salt and pepper and put aside. Drain and reserve liquid from salmon. Mix egg, seasonings, sautéed onion, bread crumbs and salmon together.

Make into small slider patties (or big if your’re going for the larger size burger). If mixture is too dry to form into patties, add reserved liquid from salmon (or a bit of water).

In a frying pan, heat olive oil. Place patties in pan. Brown on each side, turning gently. Drain on paper towels when done. Can also place all of the patties on a sheet pan and broil in the oven on high heat. When one side is browned, flip and brown the other side. Serve on a toasted bun with your condiment of choice (mayo, mustard, pickles, grilled pineapple etc…). Enjoy!
