Vanilla-Cinnamon Apple Cake

Seasonal & Holiday Eats!

This recipe is yet another example of why Passover food (especially baked goods) don’t have to taste like cardboard. This all year round treat is easy to make and will quickly become a fan favorite for kids and adults alike! Enjoy!

•   3 eggs
•   ¾ sugar
•   1/3 cup vegetable oil
•   ¾ cup cake meal
•   1 tsp baking soda
•   1 tsp vanilla
•   ¼ tsp salt
•   5 peeled and cored Granny Smith Apples

Apple Topping:
•   1/3 cup chopped walnuts (OPTIONAL)
•   ½ cup sugar
•   2 tsp cinnamon

Preheat oven to 350 degrees.

Coat apples with topping as you slice them in a bowl – You can cut the apples in slices or in cubes – your choice as both work well. I like cubes as you get apple in almost every bite. Set aside coated apple mixture.

Beat eggs, sugar, vanilla and oil until smooth – Add cake meal, salt and baking soda and mix well. Combine apple mixture and batter, folding gently. Pour apple-batter mixture into a greased 8 or 9” sq pan (you can double the recipe and use a 9x13” pan or make into individual muffins using muffin tins.) Bake in oven for roughly 1 ½ hrs until a fork comes out smooth. Let cool and serve.
