Quick And Easy Griddle Pizza

What makes this recipe so “quick and easy” is that the dough is yeast-less and requires no rising time. Once the dough is made, it’s just minutes to toast the crust and then add the toppings. It’s truly delicious and can be extremely healthy when adding super nutritious veggies to the mix!

Yeast-less Dough:
2 1/2 c. flour
2 3/4 tsp. baking powder (if using baking soda use half and omit salt)
1 tsp. salt
1 tbsp. oil
1 tbsp sugar
3/4 to 1 c. water

Mix dry ingredients. Add 3/4 cup water and oil. Stir until it forms a ball. If dough is stiff, add more water. The dough will be soft, not sticky. Knead on a floured surface for 3-4 minutes. Once the dough is formed, take a small ball of it, roll it into a six inch diameter and place on a heated and well oiled griddle (can use non-stick spray). Toast one side lightly and then turn to do the same to the other. As the second side is toasting, add any or all of the topping options below to the already “baked” side.

Tomato Sauce
Mozzarella Cheese
Parmesan Cheese
Assorted Veggies:
- Broccoli          
- Olives                      
- Onions                      
- Tomatoes           
- Spinach           
- Mushrooms        
- Fresh basil                     
- Garlic

Since you aren’t using an oven, you will need to pre-cook most of these toppings – You can pan sauté or roast the veggies to do so. Seasonings can include dry oregano, basil and garlic powder. Also salt and pepper to taste. 

Once the toppings are on, to melt the cheese, pour a few teaspoons of water around the pizza and then cover it with a metal bowl to steam it for a few seconds – The resulting steam will quickly melt the cheese without making the pizza soggy…Do not steam for an extended period of time! Once cheese is melted, remove bowl and pizza from the griddle and serve.
