Tuscan Panzanella
Ingredients:
Large loaf crusty bread
8 cups rainbow heirloom tomatoes
1 yellow bell pepper
1 red bell pepper
1 large red onion
1 log or block mozzarella cheese
1 cup olives (any color)
2 cups fresh basil
½ cup olive oil
¼ cup red wine vinegar
¼ cup lemon juice
Salt and pepper to taste
Slice onion and basil into thin strips, and cube all other ingredients
Combine olive oil, vinegar, lemon juice, and salt and pepper in bowl and whisk
Place all ingredients in large bowl and toss with dressing
