Thumbprint Cookies

Delightful Desserts!

2 2/3 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup cold unsalted butter
2/3 cup sugar
1 egg
1 egg white
1 teaspoon vanilla

Filling:
Any fruit jam (Strawberry and Apricot are my favorites!)

Combine the flour, baking powder and salt in a food processor. Add the butter and pulse. In a small bowl, mix together the sugar, vanilla, egg and egg white. Add it to the processor and pulse to mix, being careful not to over mix. Chill dough for 30 minutes.

Preheat oven to 350 degrees F.

Remove chilled dough from refrigerator and roll into 1/2 inch balls. Indent center with your thumb making a well. Add 1/2 teaspoon jam to the well. Bake until just brown, let cool and serve with lots of milk!
