4 carrots, shredded
1 apple - peeled, cored and shredded
½ Cup Raisins (can use dried cranberries as well)
1 tablespoon lemon juice
2 tablespoons honey
1/4 cup slivered almonds (Optional. Can use pecans or walnuts as well.)
Salt and pepper to taste
*To add a little creaminess, add 2 Tbsp of Mayo or Greek Yogurt (Optional)
This recipe offers great flavor and texture. The sweetness of the carrots, honey and raisins is offset by the citrus tang of the lemon juice while the yummy crunch of the nuts gives the dish a great crunch!
In a bowl, combine the carrots, apple, lemon juice, honey, nuts, salt and pepper (and mayo/yogurt). Toss and chill before serving.
