Dessert Quesadillas (2 Ways)

Delightful Desserts!

This recipe can be made with many different kinds of fruit, but especially bananas or strawberries as both go great with chocolate!

BANANA "SPLIT"
•   1 pound cream cheese, at room temperature (nut butter for vegan option)
•   1/2 cup confectioners' sugar
•   ½ tsp cinnamon
•   ½ tsp vanilla
•   2 ripe medium bananas, peeled
•   10 flour tortillas (7 inches in diameter)
•   4 tablespoons butter
•   Warm chocolate or caramel sauce
•   4 medium bananas

In the bowl of an electric mixer, beat the cheese until smooth. Add the sugar, cinnamon, vanilla and bananas, continue to beat until smooth. Spread 1/4 cup of the filling over half of each tortilla. Fold the other half over the filling and press slightly. Place on a large plate and cover with plastic wrap. Refrigerate until the filling sets, about 30 minutes. In a large sauté pan, over medium heat, melt 1 tablespoon of the butter. Pan-fry the tortillas in batches, 3 at a time, until golden on each side, about 2 minutes per side. Repeat the above process with the remaining butter and filled tortillas. To serve, slice each filled tortilla into thirds. Arrange the slices in the center of each serving plate. Spoon the warm chocolate or caramel sauce over each plate. Peel the bananas and slice 1/4-inch thick. Garnish each plate with the sliced bananas and a dollop of whipped cream.

STRAWBERRY-BANANA "DELIGHT"
-       2 ripe bananas
-       ¼ cup chocolate chips/Oreo cookies
-       ¼ cup raisins
-       ¼ tsp cinnamon
-       ½ tsp vanilla extract
-       4 tablespoons Chocolate syrup
-       2 tablespoons mascarpone cheese
-       1 tablespoon plain Greek yogurt
-       Flour tortillas
-       Non-stick spray
-       3 Strawberries
-       Whipped cream

While clearly an easy and delicious dessert, this recipe also provides quality nutrition as well. The banana and raisins offer major benefits fruit wise and the Mascarpone cheese and Greek Yogurt are good sources of calcium. Flavor wise, the Mascarpone brings a sweet creaminess to the chocolate while the addition of the Greek yogurt offers a slight tang that adds to the flavor of the dish. Enjoy!

In a bowl, peel and roughly mash the bananas. Mix in cinnamon, chocolate chips and the raisins. In a second bowl, mix Mascarpone cheese, Greek yogurt, vanilla extract, chocolate syrup. The result should be a delicious chocolate cream.

Take a flour tortilla and spread a layer of the banana mixture on it (not too thick!). Then spoon a layer of the chocolate cream on top of the banana mixture. Cover with the second tortilla. Spray a sauté pan or a griddle with the non-stick spray and toast each side of the tortilla until warm and turning golden brown. Be careful when you flip the quesadilla so the filling doesn’t spill out. Remove quesadilla from the pan, let rest for 30 seconds, cut into four even slices (like a pizza) and serve. You can drizzle some more chocolate syrup on top and serve with the whipped cream and strawberries for garnish.
