Israeli Couscous Salad

Amazing Appetizers!

3 tomatoes, chopped
1 large cucumber, peeled and chopped
4 scallions, thinly sliced
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons fresh lemon juice, or to taste
1/4 cup extra-virgin olive oil
Salt and Pepper to taste
1 cup of couscous
2 cups of water (use some stock for even better flavor)
Accompaniments: warm pita bread, olive oil

Bring 2 cups of water (or stock) to a boil, add a tablespoon of Olive Oil and then add couscous. Turn off heat and cover. After five minutes stir and set aside. In a bowl, add tomatoes, cucumber, scallions, parsley, and salt and pepper to taste. Squeeze lemon juice over salad and stir. Drizzle oil over salad, toss and then add Couscous. Stir salad and serve.

It can also be made without couscous for a more traditional Israeli Salad.
