Italian Veggie Dunkers

Sumptuous Snacks!

It’s quite impossible not to LOVE these delicious veggies. With some fresh and tasty ingredients and a little effort, getting kids to eat healthy foods becomes an easy and FUN activity!

Nonstick cooking spray
2/3 cup fine dry unseasoned bread crumbs
1 tsp dry basil
1 tsp dry oregano
2 tablespoons grated Parmesan cheese
1/8 teaspoon salt
½ tsp Garlic powder (optional)
4 slightly beaten egg whites
2 tablespoon milk
4 cups cauliflower florets and/or broccoli florets
1 jar tomato sauce

1. Lightly coat a 15x10x1-inch baking pan with cooking spray; set aside. In a large plastic bag combine bread crumbs, cheese, herbs and seasonings. In another large plastic bag combine egg whites and milk.

2. Add vegetables to the plastic bag with the egg mixture. Close bag and shake to coat well. Add vegetables to plastic bag with crumb mixture. Close bag and shake to coat well. Place coated vegetables on the prepared baking pan. Spray veggies with non-stick spray.

3. Bake in a 400 degree oven about 20 minutes or until golden brown, stirring twice. If pressed for time, you can lightly pan fry the veggies until golden brown (clearly the baking method is healthier as you can avoid the oil). Meanwhile, heat the pizza sauce in a small saucepan over medium heat. Serve vegetables with warm pizza sauce. Makes 6 servings.
