CKA's Kicked Up Quesadillas with Guacamole
Mozzarella Cheese (can use Cheddar, Jack and/or Manchego cheese as well!)
Cajun or blackening seasoning
Veggies of your choice (optional)
Non stick spray
Spray cook top and toast two tortillas. Dice the cheese and place on one of the toasted tortilla and then season. Place the untoasted side of the other tortilla face up on top of the cheese and after a minute or so on low heat, flip. Toast the other side of the tortilla and once the cheese has melted, remove from heat and slice into triangles. This should yield four large or eight smaller triangles.
There are endless optional exciting ingredients you can use in this recipe to jazz it up. Just a few examples are adding chopped olives, sliced artichoke hearts, sautéed or caramelized onions, mushrooms, corn or avocado slices on top of the cheese before topping with the other tortilla. Get creative! Just be careful when you flip to toast the other side of the tortilla that nothing spills out of the sides. Serve with salsa, guacamole (see recipe below) and a dollop of sour cream. YUM!
• 3 ripe avocados, preferably Haas
• 1 /4 cup chopped fresh cilantro
• ½ cup red onion, diced
• ½ cup quartered cherry tomatoes
• 2 limes, juiced
• 1 Tbs Jalapeno pepper – seeded and finely diced
• 1 1/2 teaspoons salt
• 1/2 teaspoon freshly ground black pepper
• Shredded lettuce, 2 tomatoes, sliced
Cut the avocados and place in a mixing bowl. Mash with a potato masher or fork until chunky. Add remaining ingredients and combine. Mound on a bed of shredded lettuce and sliced tomatoes.
