Potato Pudding (Kugel)
4 large potatoes peeled and cubed
1 onion cubed
½ cup vegetable oil
1 ½ teaspoons salt
½ teaspoon black pepper
1 ½ tsp Garlic Herb Powder
1 tsp Cajun or blackening seasoning for a slight kick
½ cup parmesan cheese
Preheat oven to 450 degrees. Grease baking dish and place it in the oven for 5 minutes. Soak potatoes and onion in cold water to prevent darkening.
Combine all ingredients including drained potatoes and onions in blender and mix until smooth. Take baking dish out of the oven and immediately pour mixture into the hot dish and bake at 450 degrees for 1/2 hour. Reduce to 350 degrees and bake for an additional 1/2 hour.
For a larger quantity, repeat the recipe, remove the dish from the oven, pour the second mixture over the first, replace the dish in the over and continue baking. You can also make this in smaller cupcake tins or pan for individual portions. If doing so, they take less time to bake so keep an eye out!
