Fruit Scones: Strawberry, Blueberry & Apple Cinnamon

Blissful Breakfasts!

STRAWBERRY OR BLUEBERRY SCONES

2 C all-purpose flour, plus 1-2 tsp for flouring work surface
1/4 C sugar plus 1 tablespoon for sprinkling on top
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
4 Tbsp unsalted cold butter, cut into 1/4-inch cubes
1 C chopped strawberries or blueberries
3/4 C Strawberry or Blueberrry 0% Chobani Greek Yogurt (can use sour cream)

This a fantastic way to make a healthy treat that tastes AMAZING. I am a HUGE fan of non-fat and 2% Chobani Yogurt and use them when baking all the time! You can pick them up at most any local market – They are great on their own as a snack or in your favorite baked treat! For this recipe, I use strawberries, but you can substitute your favorite fruit (blueberries, peaches etc…) and just use the corresponding Chobani Yogurt flavor. Enjoy!

Preheat oven to 425°F. Stir together flour, sugar, baking powder, salt and baking soda in a bowl. Add butter, using hands or fork, work until mixture resembles coarse crumbs. Stir in strawberries, and then Chobani to hold dough together. Do not overmix.

Turn dough onto floured surface and with floured hands, knead 2 to 3 times. Gently press dough into rectangle, about 1 1/2-inches thick. Fold rectangle into thirds, like a letter. Press dough into 9-inch round. Cut into 8 wedges or use a round cookie cutter to cut circles.

Arrange wedges on a parchment-paper-covered cookie sheet. Sprinkle each wedge with a little sugar. Bake until golden, about 12 to 15 minutes. Remove to wire rack to cool.

HEALTHY APPLE CINNAMON SCONES

2 C all-purpose flour, plus 1-2 tsp for flouring work surface
½ C sugar plus 1 tablespoon for sprinkling on top
2 tsp baking powder
½ tsp baking soda
¼ tsp salt
4 Tbsp unsalted cold butter, cut into 1/4-inch cubes
1 heaping cup of peeled and diced Granny Smith Apples
1 C Greek Yogurt (this is a super healthy substitute for the usual sour cream)
1 ½ tsp Cinnamon
1 tbsp real maple syrup
1 tbsp brown sugar

Add butter, using hands or fork, work until mixture resembles coarse crumbs. Gently stir in apple mixture, and then yogurt to hold dough together. Do not over mix.

Turn dough onto floured surface and with floured hands, knead 2 to 3 times. Gently press dough into rectangle, about 1 1/2-inches thick. Fold rectangle into thirds, like a letter. Press dough into 9-inch round. Cut into 8 wedges – can also use a round cookie cutter and leave them circular shaped.

Arrange wedges on a parchment-paper-covered cookie sheet. Sprinkle each wedge with a little sugar. Bake until golden, about 12 to 15 minutes. Remove to wire rack to cool. You can also use a griddle to cook these scones if you don’t have an oven – just cook until golden and then flip to do the same on the other side.  **This can also be done on a griddle – Essentially making a griddle cookie. Just brown both sides making sure the interior is done as well!

Once cooled, serve with milk or tea. Enjoy!
