Fresh & Dried Fruit Cobbler

Delightful Desserts!

½ cup dried apples
½ cup dried apricots
½ cup dates
½ cup dried figs
½ cup dried cranberries
1 diced Granny Smith Apple
1 tsp cinnamon
½ tsp nutmeg
½ tsp salt
1 tsp vanilla extract
½ cup chopped Walnuts **Optional (you can leave this out entirely or substitute any nuts you prefer)
1 tablespoon real Maple Syrup
3 cups apple juice
Vanilla Wafer Cookies
Whipped Cream

This dried fruit dessert is really yummy and good for you! It’s an easy and natural energy booster that’s super low fat and high in anti-oxidants!

Dice all the dried fruit and Granny Smith apple and sauté in a pan with the apple juice. Add cinnamon, nutmeg, salt, nuts and vanilla and stir. Cover to let steam on low heat for 2-3 minutes - If you need to, you can add more apple juice if mixture is too dry. Remove from heat. In a processor (or a simple plastic bag), crush vanilla cookies to make an easy crumble topping. Serve warm fruit mixture with crumbled cookies on top and a topping of whipped cream.  ENJOY!
