Cheesy Broccoli Cakes & Cauliflower Cakes

Amazing Appetizers!

A variation on CKA’s cauliflower cakes, this vitamin and antioxidant packed veggie cake is yet another phenomenal way to prepare nutritionally loaded broccoli in a fun and super yummy way!

CHEESY BROCCOLI CAKES

1 large broccoli head
2 large eggs
1/2 c cheddar cheese, grated (Can sub in Parm or whatever other cheese you prefer)
1/2 c panko bread crumbs
1/2 tsp garlic powder
1/2 tsp cayenne or blackening seasoning (more or less to taste)
Salt to taste
Olive oil (can sub in non-stick spray)

Cut broccoli into florets & steam using boiling water until tender about 10 minutes. Drain. Mash the broccoli while still warm. Stir cheese, eggs, panko, cayenne & salt to taste.

Coat the bottom of a griddle or skillet with olive oil over medium-high heat. Form the broccoli-cheese mixture into patties about 3 inches across. Cook until golden brown & set, about 3 minutes per side. Keep each batch warm in the oven while you cook the rest. Enjoy!

This is yet another phenomenal way to prepare nutritionally loaded cauliflower in a fun and super yummy way! No child will be able to resist this cheesy treat!

1 head cauliflower
2 large eggs
1/2 c cheddar cheese, grated (Can sub in Parm or whatever other cheese you prefer)
