Apple-Date Oatmeal Cookies

Delightful Desserts!

1/2 cup butter or veg oil
1 cup packed brown sugar
1 egg
1/4 cup of apple juice or milk
1 tsp Vanilla
1 teaspoon baking soda
1 cup all-purpose flour
1 1/2 cups quick-cooking rolled oats
1 1/4 cups packed pitted dates (about 10 ounces)
1 cup chopped apples
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 cup chopped walnuts (OPTIONAL)

Preheat oven to 350 degrees F (175 degrees C).

Cream the butter and brown sugar together. Mix in the egg, vanilla and apple juice or milk. Stir in the apples. Add the flour, oats, baking soda, cinnamon, cloves, nutmeg. Stir in the nuts (if using them) and dates.

Either drop spoonfuls of dough onto a lightly greased cookie sheet or spread dough into a 13x18 inch lightly greased pan to make bars. Bake at 350 degrees F (175 degrees C) for 8 to 10 minutes for the cookies or 20 to 25 minutes for the bars. Let cool and serve.

*If making bars, once cool, cut evenly, ice if desired, and serve.

**You can also add 1/4 cup Chocolate Chips to this recipe– but the cookies/bars are already on the sweet side and don’t need it unless you are a chocoholic – It’s great both ways!
